Wings with sweet wine, Garlicky Chicken, Red Pepper Stew, Moorish, Spanish Olives, grapes and red wine and chestnuts. Croquetas de Jamon Page 90. Fried ham and bechamel balls. Yum. Scallops, Green Chilli & Coriander Salsa, Peach & Buttermilk Page 48. Mostly curious about this flavour combination, seems very odd. Only long thing is draining the buttermilk, apart from that, a very quick and probably quite intriguing starter.
Mains:
Flattened Chicken Page 52. Great, do it with a roast. Main trick here seems to be cutting open the chicken to put garlic and thyme in, and adding quite a pit of water to the pan for cooking, easier basting at least. Octopus with Baby Potatoes, Pementon & Olive Oil Page 65. Sounds amazing if I can find an octopus, big tentacles are recommended. Lots of paprika and oil in this one so I'm a fan. Blanquette de Veau with Pilau Rice Page 73. If feeling up to the challenge, not impossible at all. Big warm dish for all the family, very creamy sauce, hearty. Paccheri with Lamb Ragu Page 97. Great Ragu, seems pretty standard. 'Nduja is cool. Uova al Purgatorio Page 99. Sounds amazing. Eggs in spicy tomato sauce. Lots of different egg cooking methods which is fun, got to be served with some really good bread, recommend toasted sourdough. Baharat & Lemon Roast Lamb with Black Sesame Sauce Page 110. Alternative to a roast, seems delicious, and not too hard to make. Need a griddle pan, hot. Sichuanese Aubergine Made 118. Quick, spicy, seems odd as a main but willing to risk it. Serve with rice. Crispy Chilli Beef Page 121. A very fancy version of the takeaway classic. Worth looking into for the frying technique if nothing else. Murgh Makhani Page 150. A simple classic. There's only so much you can so with butter chicken, so may as well do it as well as you can! Chargrilled Teriyaki Lamb Chops Page 154. A lamb chop recipe I can get on board with! Lots of teriyaki goodness. Another Griddle dish. Slow-roasted Pork Belly with Apple Sauce, Garlic Puree & Port Jus Page 181. Big long time recipe, lots of fridge resting, otherwise, a delicious belly recipe. Smoked Bacon Potato Cakes with Soft Egg Dressing Page 229. Yum! Simple starter, takes a while though, for a starter. Bouillabaisse Page 242. Give this bad boy another go, come at me Tom Aikens. Cullen Skink Page 250. Fish soup, but Scottish! Caramelised Parsnip & Coconut Soup with Parsnip Bhajis Page 274. YUM. Vegan and GF as well, so, peng. Soup on its own looks really good too.
Deserts:
Chocolate Fondant with Peanut Butter Ice cream Page 20. Not impossible. Need an ice-cream churner ideally. Dariole mould also? Otherwise all good. Chocolate Torte Page 33. Very simple, breadcrumbs in a chocolate cake is a revelation. Sea-salted Caramel Tart with Milk Chocolate Delish.
